Ideal for balmy days and days in between, staple favourite in Trinidad and around the Caribbean region, mango chow is one for adults and kids alike!
2 half-ripe mangoes (use other fruit as desired)
4 cloves of garlic (add or minus as desired)
Salt to taste
1 or 2 scotch bonnet or other hot pepper (use more or less as desired)
4 leaves of bhandaniya or cilantro,
Juice of one lime
- Peel and slice mangoes into thin strips and place in a medium bowl.
- Finely chop bhandaniya or cilantro, garlic and pepper and add to sliced mangoes.
- Add lime juice and salt and mix well. Adjust salt and pepper to taste.
Note: the longer the chow is left to marinate, the hotter and saltier it becomes. Enjoy!
